ADM to Feature New Sorghum Flour for Gluten-Free and Multi-Grain Bakery Items at IBIE 2010

Archer Daniels Midland Company (NYSE: ADM) will feature its new sorghum flour in a gluten-free chocolate chip cookie at the 2010 International Baking Industry Exposition (IBIE) in Las Vegas, Sept. 2629. Visitors to ADM’s booth, #9213, will also have the opportunity to learn about sorghum flour and other ADM flours and milled products, cocoa and chocolate ingredients, and VegeFull™ cooked bean ingredients.
In addition, Steve Freed, ADM Investor Services vice president of Commodity Market Research, will review the factors that have driven recent volatility in commodity prices. Freed will host presentations at the ADM booth on Sunday, Monday and Tuesday at 11 a.m. and 2 p.m.
IBIE is one of the world’s largest baking expos, with thousands of attendees from the grain-based foods industry and more than 700 exhibitors showcasing technology, equipment and new products.

The gluten-free chocolate chip cookie that ADM will sample during IBIE uses the company’s new sorghum flour and VegeFull bean powder in place of wheat flour, as well as ADM’s Ambrosia® chocolate chips.

Earlier this year, ADM began offering white sorghum flour and whole grain sorghum flour, for gluten-free and multi-grain applications. ADM’s sorghum flour has a light color and neutral flavor, making it ideal for use in foods such as cakes, cookies, breads and pancakes.
As one of the largest flour millers in the world, ADM offers bakery customers a range of high-quality flours, including winter, spring and soft wheat, and specialty flours such as Kansas Diamond® white whole wheat flour. ADM Milling also offers wheat glutens, isolates and starches; dry sweeteners; mixes, fillings and morsels; and specialty milled products such as bulgur, wheat germ and bran, and malted barley flour.
Visitors to the ADM booth will also have the opportunity to learn about ADM’s cocoa and chocolate baking ingredients, including Ambrosia chocolates, chips, chunks and coatings for use in baked goods, and its line of deZaan® cocoa powders, available in vibrant reds and browns to help bakers distinguish their products.
Also featured this year is ADM’s line of VegeFull cooked bean ingredients, which includes powders, grits, noodles, pieces and whole quick-prep beans. VegeFull ingredients are made from black, small red, navy, pinto or garbanzo beans and helps to increase vegetable protein and fiber in foods such as baked goods, cookies, snacks and cereals.
Through its Bakery Platform team based in Overland Park, Kan., ADM Milling provides bakery customers with access to all of these ingredients and more, and works with them to address research and development needs. The ADM Bakery Platform team is made up of highly experienced food scientists and food technicians, with each team member bringing a strong technical understanding of various bakery applications and bakery processing techniques.
