Nestlé Toque d’Or catering competition crowns 2010 winners

Nestlé Toque d’Or, the UK’s premier student catering competition, crowned the University College Birmingham as the prestigious 2010 winners in July.
Competing against some of the most talented teams in the country, University College Birmingham secured first place by impressing judges and the 100 members of the public who dined in the team’s concept restaurant at the BBC Good Food Show Summer.
Announced at an awards ceremony in London in the United Kingdom, the team of six mentored by Michelin-starred chef Andreas Antona of Simpsons prepared a meal of Slow Cooked Organic Shetland Salmon, with Asparagus Mayonnaise, Quail Egg and Avruga Caviar, followed by Roast Loin of Cornish Lamb, Green Beans, Feta and Chickpea, Radish and Lovage Jus, finished with a dessert of Caramel and Chocolate Parfait Espresso Ice Cream.
Neil Stephens, Managing Director for Nestlé Professional in the UK, said: "University College Birmingham has raised the competition benchmark yet again with the creativity, raw talent and enthusiasm its team has shown. Each one of these students embodies everything the competition stands for and why we set up the competition in the first place which was to help nurture tomorrow’s talent. I am sure each and every one will go on to have very bright careers.

James Tanner, head judge of the 2010 Nestlé Toque D’Or competition, added: «The commitment and the sheer natural talent in this team was clear from the very beginning. All six students showed 100% passion and really rose to the challenge in conditions that can only be described as working in a real pressure cooker. They should all be extremely proud of what they have achieved, especially with such a high standard of entries this year.»
The competition winners will be guests of Nestlé Professional at the world famous Bocuse d’Or in Lyon, France, in January 2011. In addition, the University College Birmingham will also receive £4,000 worth of catering equipment from the Savoy Education Trust.
